Good for you. How can someone with such a busy life have time to plan a day ahead and soak dry beans?! Think I'll try this with some shortcuts -- canned cannellini and sliced pancetta! happy autumn!
ReplyDeleteI would probably use canned beans the next time, but, you might lose some of the earthy flavors of the dried beans. I strongly recommend not using sliced pancetta -- you don't want to miss the yummy goodness of the chunks of pancetta in the finished soup - and it it only took a few minutes to chop it up.

I have made a similiar soup using butter beans and ham, going to try this one...Mare, I am hosting a reception for the sponsors of the Innocence Project fundraiser, will be 50-75 people.. Any thoughts about the menu? I am thinking about my version of Bow tie pasta, need another complementary pasta with perhaps a red sauce? Ceasar salad, bruscetta with asparagus pesto and what else???
